Adamantoise have very strong armor, but this can be nullified by having one of your party members use 
Armor Break on them. They will still take quite a number of hits, so buff up your party members early on in the fight.

You can find them anywhere Inside Sin but also in the Omega Ruins. They are one of the more common enemies that you will find in these areas.
